Pizza Rolls

This is a family favorite around here. I refuse to buy frozen pizza rolls...These have so much more flavor and are fresh plus fast. Its an easy go to lunch that makes my 3 year old as well as my husband happy.

A few very simple ingredients:

1 pkg crescent rolls
pepperoni slices
string cheese sticks
pizza sauce

Easy right!

Throw them in the oven at 350 for 12 minutes.

Then they should look something like this....

If you want to make it a little healthier throw some veggies together and make a side salad..

Enjoy!

MMM healthy snack

I had so many people love the Banana Bites and request more healthy snack ideas. These are one of my all time favorite healthy snacks. I love them, Jayson loves them and Ty loves them.

Yummy Apple Snacks.

Buy any type of apple. I usually get Gala because they are yummy and much cheaper.

Cut them up. If you don't have one of these apple cutters just use a knife. It will taste the same:)

We love Nutella but you can also use peanut butter.

Spread it on.

Then sprinkle with granola.

Easy check. Yummy check. Cheap check.

Banana bites

How about a healthy snack today!?

I have seen these all over Pinterest and have had a lot of friends tell me to try them. I thought it would be fun and yummy but was too lazy to actually make them. Then I had a batch of bananas start to go bad. It was shocking because bananas usually don't make it through the week at our house. I have to buy two or three batches at a time. I tend to get one batch of yellow and two really green ones. However we have been gone a lot lately and just didn't get around to eating them this time. The thought of throwing away food makes me sad. It is so expensive to buy healthy food so there was no way I was going to let these babies go bad.

So they're not totally bad but one more day and in my opinion they would have been nasty. So I thought this was the perfect opportunity to make the banana bites I have heard so much about.

You can cut them up as thick or thin as you would like. Ty helped me cut them so mine are all sorts of sizes.

Seriously who doesn't love peanut butter??! I could eat it every day.

I really wasn't planning on having Ty help me. I actually told him to stop when he started. I was nervous about him using the knife but he totally rocked it. He is just way too big and I have to stop thinking of him as a baby. We used butter knifes and I was right by him the whole time. He absolutely loved them. It was hard to keep some to freeze when he ate them as he went. He loves bananas and peanut butter so it was a perfect snack for him.

You can also put as little or as much peanut butter as you like. If you are doing it for a super healthy snack I wouldn't put a ton on. We were having fun and Ty kept layering it on so our peanut butter is busting out the sides.

I debated on posting this picture of our freezer. It is pretty sad looking. I put them in on a plate so they would freeze individually. Then after one hour I took them out and transferred them from the plate to a zip-lock bag. Jayson came home for lunch and we ate them all!

Maybe they will last longer at your house.

Pioneer Woman lasagna

The Pioneer Woman has met our house again.
This time while I was visiting my family back home we decided to whip our lasagna up together. Ember was such a big help. . . ---She was only up there for the picture!!---
We decided to make them at like 7 at night. So we wrapped them up to freeze and eat another day.
Mom and Dad could never eat theirs alone and neither could Jayson and I. So mom and Dad will invite grandma and grandpa over and Jayson and I will go to Heathers and share with her Betsy and Derek!!!
We served it up with garlic bread, salad and corn. Ty and I LOVED IT!!!
Heather and Betsy also gave it n A+.....Jays and Derek didn't get in any pictures but they went back for seconds ;)

Pioneer Woman Me

A while ago I mentioned Jayson got into the pharmacy program in Colorado...Yup looks like were moving to Denver. I am so beyond excited for this new adventure for our family. We will be living there for at least four years, most likely five or six.

With that being said, its still OK for me to be really sad too right?
My family and I are very close.
My mother, two sisters and sister in law...I don't even know how to describe them other than saying they are angels. Besides Jayson they are my best friends.

We tend to get together a lot for craft days...cooking days...sewing days.
When I start to think about missing out on these memories I get rather sad.
Picturing them gathered around laughing and giggling with out me...I feel so left out.
Don't get me wrong, I am so happy to be moving and want them to continue to do these things even with out me...Just the thought makes me sad from time to time...

Now with that being said my wonderful sister Lauren thought of an idea.
We are all in love with the Pioneer Woman...
So once a week we will all be taking the same recipe...making it...taking lots of pictures...then of course blogging about it.

Yay, I wont be left out. A simple fun way to stay connected.
My family rocks right.

We decided this week to start off we would make meatballs.
I hate touching raw meat. Seriously I gagged during this whole process.
(but I knew the end result would be worth it)
This step was a little fun. The meatballs looked like snowballs. Ty wanted to eat them like this. I had to convince them they were ewwie and we needed to wait for them to cook.
This step...I was glad I had a apron on and stood back.
Drizzled the sauce on and ready to put in the oven.
Both kids stayed busy while I cooked, Ty played in the sink with soap and water..and Ember slept.
Pioneer woman suggests to put it with noodles, so I did just that...added some toast and corn and we were set!

Even my picky eater loved it. Just not me snapping pictures in his face.
I was all excited and telling Jays about how we will be doing this once a week....
he smiled...and said "how about every day?!"
haha
I think he loved it!
